I start my new series of Raw Detox soups with Cucumber Gazpacho. And just a warning first: This soup gives you a neat extra-energy kick and makes addictive!


Raw Detox – this means "detox with raw food": according to Matthew Kenney’s book "Every Day Raw Detox" you can detoxify your body when you avoid all food and dishes, which may impede the natural healing powers of your body. These include mainly processed foods and fast food. In a raw food diet your body gets plenty of undestroyed enzymes and nutrients, which gives you a fresh boost of energy for the whole day!
Even though I normally don’t like cold raw food soups I had to change my mind – and this happened because of a brilliant recipe from Judita Wignall. I have eaten this Cucumber Gazpacho now almost every day within the last few days and there is no end in sight yet, because this soup truly makes addictive. It is just so incredibly refreshing!
Tip: taste the soup directly after blending it or slightly chilled, you can store it in the refrigerator for one or two days or put it into the freezer to store it for a longer period.

 

Cucumber Gazpacho

2 cucumbers, diced
2 green tomatoes, diced
1 cup water
1 cup rod celery, diced
¼ cup lemon juice
2 tablespoons fresh dill,
1 teaspoon salt
1 large avocado

Insert:

small tomatoes, diced
cucumber, finely diced
a few dill sprigs to decorate



Put all ingredients in a blender and mix it smooth. Use the finely diced tomatoes and cucumbers with dill twigs for decoration. Enjoy the soup either directly after preparing it or cool it for half an hour in the fridge.
